| 内容記述 | 日本には米国外食産業史の研究は1953年以降のマクドナルドなどの研究しかない。そこで,筆者たちは米国で最初にレストランをチェーン化した企業の研究を行うことにした。その結果,1876年にレストランをチェーン展開していたフレッド・ハーベー社と言う企業が存在し,最盛期には100店舗以上をチェーン展開していたことがわかった。フレッド・ハーベー社は品質,サービス,クレンリネスと言う技術革新をすでに確立していたことも明らかとなった。 | |||||

| 内容記述 | As far as the research of the history of the U.S. food service industry, Japan has only the research of McDonald's in 1953. There is no research record of food service before this date.Therefore, a study of the first food service company in the U.S. was conducted. This food service chain was started by Fred Harvey in 1876, and operated more than 100 estaurants.Fred Harvey also developed Innovation, such as quality, service and cleanliness. | |||||
